Poly Popcorn

A movie night favourite gone tropical. The perfect combination of sweet & salty in this healthier twist on conventionally buttered & salted popcorn.
Ingredients
  • 1 brown paper lunch bag
  • ¼ cup popcorn kernels
  • 1-2 TB raw virgin coconut oil (melted)
  • 1-2 tsp unrefined coconut sugar
  • pinch of sea salt
Method
  1. Add ¼ cup popcorn kernels to a brown paper lunch bag
  2. Close and fold over the opening two times
  3. Place in microwave and cook for approximately 1 minute and 30 seconds. (***This varies depending on your microwave, ours for example is exactly 1 minute and 22 seconds).
  4. To find out how long to cook in your microwave, set the time for 1 minute 30 seconds and listen carefully for the pops to slow down to around one pop a second and then turn off immediately and note the time. Never leave unattended and you must be careful as it goes from perfect to burnt VERY QUICKLY. Do NOT over cook. It took us a few times to figure out the perfect time for us.
  5. Transfer popcorn into a bowl sifting out any left over un-popped kernels
  6. Add the melted coconut oil, sprinkle on the coconut sugar & pinch of salt and toss to mix.
  7. Adjust seasonings to taste.
  8. This makes one big serving or two small servings for kids.
  9. You can reuse the brown paper bag for multiple batches or you can serve the popcorn in the bags and use multiple bags, one per person.
Notes
We find using a brown paper bag to be a quick and convenient way of popping popcorn. Alternatively you could use your traditional air popper or what ever method you prefer and then adjust the seasonings according to your batch size.
